The plastic construction of this Cambro 42HP110 H-Pan high-heat food pan provides durability to support heavy use without bending, denting, and cracking. This material resists damage at temperatures between -40 and 375 degrees Fahrenheit, so it can be used for flash freezing and retherming. A quarter-size unit, the pan has a depth of 212 inches, so it can hold 145 quarts of food. It has molded-in graduation marks and includes a smooth, nonstick interior to increase yield amounts. This unit has a uniform, 12-inch flange that fits in standard food bars and prep tables. In storage applications, the pan can be stacked with other fourth-size pans.
